 1 kg Schweinebauch
 2 Karotten
 ½ Sellerieknolle
 1 Zwiebel
 3 Knoblauchzehen
 1 EL Tomatenmark
 1 l Rinderbrühe
 300 ml Rotwein
 1 l Sonnenblumenöl
 2 Zweige Rosmarin
 1 Lorbeerblatt
 2 Pimentkörner
 1 EL Blaubeermarmelade
 1 Dose Main
 2 EL Butter
 1 kleine Zwiebel
 1 Zweig Rosmarin
 200 ml Sahne
 1 EL Polenta
 Milch

Schweinebauch trocken tupfen, Schwarte und falls vorhanden Knochen entfernen

mit Salz und Pfeffer würzen, mit etwas öl bei mittel Hoher Hitze anbraten und falls vorhanden mit den Knochen in einem Bräter geben

Das Gemüse putzen, grob würfeln und in der gleichen Pfanne ca 5 Minuten anbraten. Danach das Tomatenmark hinzu geben, leicht mit Salz und Pfeffer würzen und 5 weitere Minuten unter gelegentlichem rühren mit rösten bis es leicht anfängt „anzubrennen“ und anschließend mit 100ml Wein ablöschen

reduzieren lassen und diesen Vorgang zweimal Wiederholen. Danach mit der Rinderbrühe auffüllen und alles auf den Schweinebauch geben, Die restlichen Gewürze und Knoblauch dazu, mit Alufolie abdecken und im Ofen bei 130 Grad ca 1,5 Stunden garen

Den Schweinebauch in 4 gleich Große Portionen schneiden, und im Ofen bei 130 Grad erwärmen

Polenta in der Mitte des Tellers anrichten, den Schweinebauch gleichmässig in der Sauce wenden und auf die Polenta geben, anschließend die frischen Blaubeeren in die Sauce geben und mit auf dem Teller geben. Mit klein geschnittenen Mini Mais dekorieren.

Zubereitungsschritte
